Pancakes in a Jar!

Ingredients

1 Cup of Flour.
1 Tablespoon of Baking Power.
2 Tablespoons of Organic Sugar.
2 Tablespoons of Vegan or Real Butter.
3/4 Cup of Soy, Nut or Dairy Milk.
Blueberries or fruit of choice.

Combine the Flour, Baking power and sugar in a small bowl,
Whisk until combined.
Stir in your melted butter and milk, until batter forms.

Place your fruit at the bottom of the jar,
Fill the jar about halfway with batter.
Microwave for about 1 minute for small jars,
Or 90 seconds for larger jars, adjust accordingly.

Top with butter, fruit and syrup.

Recipe makes 4 small jars,
Or 2 large.

Need some inspiration.
  • I recently switched jobs from being in a very active job, where I was standing all day, lifting things and walking eight hours--to a desk job where I sit seven out of my eight hours. I have gained a considerable amount of weight. While I've started to work out and lost 15lbs--I have a ways to go. Any advice on where to start? I'm really pretty down about my weight : C

Option 1 Ingredients: Berry-Flavored Smoothie
  • 1 avocado, halved, peeled and pitted
  • 1 lime, juiced
  • ½ cup coconut milk
  • 16 ounces frozen chopped mango, thawed
  • 16 ounces frozen strawberries, thawed
Option 2 Ingredients: Mango-Flavored Smoothie
  • 1 avocado, halved, peeled and pitted
  • 1 lime, juiced
  • ½ cup coconut milk
  • 24 ounces frozen chopped mango, thawed
  • 8 ounces frozen strawberries, thawed

Instructions
  1. Select ingredient list for either Option 1 or Option 2.
  2. Place all ingredients for Option 1 or Option 2 in a food processor.
  3. Puree until smooth and creamy.
  4. Serve.
